Since you all liked the One Minute Microwave Chocolate Cake recipe so much, I now bring you the peanut butter variation. This has been tried and tested several times by me, but my boyfriend has had more of a role in refining this recipe than I did. The original can be found at Back To Her Roots, but we think that our version is a big improvement.

This recipe is so great because most kitchens are stocked with the ingredients all the time, and it’s perfect for a night in when you’re feeling like something sweet that won’t take you an hour to bake.

Serves one.

1 egg, beaten
1.5 tbsp brown sugar (or white if that’s all you have)
1/2 teaspoon baking powder
1 heaped tablespoon flour
2 tablespoons peanut butter
1 tsp vanilla essence
2 tbsp choc chip pieces (Add more here if you want – depends on how much chocolate you want. You can also use chocolate vermicelli/bits of broken chocolate)

Whisk the egg, sugar, baking powder, peanut butter, vanilla, and flour in a small bowl. Add in the chocolate pieces or whatever else you choose to use. Pour the mixture into a ramekin or pudding dish, or anything that can be microwaved.
Microwave for 30-45 seconds. It cooks very quickly.

The original recipe also included a frosting for the cake, which I didn’t really like. But, if you’d like to try it anyway, all you need is about 1tsp milk and some icing sugar – mix together and pour over the cake. I’d recommend rather melting chocolate and pouring it over the cake instead if you want a bit of frosting.
