What I’m about to share with you is hands down my favourite salad recipe. This was handed down to me by my mom, who has improved and adapted it since it was handed down to her by who-ever.

It can be as spicy as you want it to be, but we usually just add a little bit of curry powder to give it some flavour, and it’s not hot at all.

500g screw noodles (or whatever type of pasta you feel like)
1 green pepper seeded and chopped
1 onion chopped
½ tsp garlic

For the sauce:
1 cup tomato sauce
½ cup vinegar
½ cup vegetable oil
½ cup white sugar
Salt and pepper to taste
2 tsp ‘Rajah Mild and Spicy’ curry powder

Cook green pepper, onion and garlic gently until soft in a little oil. Cook pasta and drain. Rinse under cold running water. Drain and toss in a little oil. Place in mixing bowl with green pepper and onion. Blend sauce ingredients and pour over pasta and mix well.

This is nice to eat warm, but it is best served chilled as a salad, so keep it in the fridge!
