You haven’t had chocolate mousse until you’ve had this chocolate mousse. This recipe came from a very close family friend whose baking skills amaze me.



500 ml cream (whipped stiffly)
3 eggs
200 g castor sugar
200 g dark cooking chocolate
75 ml old brown sherry
75 ml water
2.5 tsp gelatine


Whip the cream until stiff and set aside. Then, melt the chocolate and be careful not to burn it. Heat the sherry, and then remove from heat and add gelatin. Mix well until dissolved, then add the water and mix until cold.

Beat the eggs and castor sugar together until light and fluffy. Add the sherry mixture to the egg mixture and whisk well. Add in the melted chocolate and mix well again. Fold in the cream and leave to set over night.
